“How do you make chicken cacciatore? I was asked the other day.

My response was rather simple.

In the 1700's, chickens were mad. Really mad.

Fed up with King George and his supporters, chickens formed a secret band to get their point across and occasionally, they would catch a Tory or two in the process.

Don't worry, chickens are docile for the most part, and usually let them go before long."

Chicken Cacciatore is a traditional Italian dish.  In Italian, cacciatore means hunter.  Therefore, chicken cacciatore means "hunter's chicken".   Just imagine coming back from a day of hunting in the woods and having this delightful meal of chicken, tomatoes, vegetables, herbs, and rice waiting for you!  The taste is delightful!  What a wonderful meal to satisfy your hunger.  Why not plan a chicken cacciatore dinner this weekend?  You will have no problem getting everyone to stay home for dinner!  
 
   
Chicken Cacciatore 
 
 
Ingredients:

Olive Oil, as needed 
1 (4 to 5 pound) chicken, cut into 8 to 10 pieces
Kosher salt 
2 large onions, sliced 
A pinch of crushed red pepper flakes 
4 garlic cloves, smashed and finely chopped 
1 red pepper, cut into ½ inch slices  
1 pound cremini, portobello or white mushrooms, cleaned and sliced
2 cups of dry white wine
2 (28 ounce) cans of Italian plum tomatoes, mashed or pureed
1 bundle of thyme  
3 bay leaves

 

Directions:
 
Coat a large, wide pot with olive oil and bring to a high heat. Season the chicken with salt and brown in the hot oil. Don’t crowd the pot with the chicken pieces. When chicken is brown, remove to a plate and discard most of the fat left in the pot.
 
Coat the bottom of the pan, with a tablespoon of olive oil. Add the onions and crushed red pepper, season with salt, and sauté over low heat for 8 to 10 minutes. Add the garlic and continue cooking for 1 to 2 additional minutes. Add the pepper and cook until soft, about 2 to 3 minutes. Add the mushrooms, and cook until they are soft. Add the white wine and reduce by half.
 
Return the chicken to the pan and add the tomatoes. Add the thyme bundle and bay leaves. Bring the liquid to a boil and reduce to a simmer. Partially cover the pot and simmer for 20 to 30 minutes. Periodically check the level of the sauce; while cooking, and replenish it with water as needed; the level of liquid should be about even with the chicken.
 
Remove the chicken from the pot and place it on a serving platter. Taste the sauce for seasoning, adjust if needed. Skim the surface of the sauce if excessively greasy. Spoon the sauce over the chicken. and serve with rice or veggies!
